command line newbie

Hi Everyone,
Please help, I think I'm trying to do something simple, but I keep on reading the webpages and I'm starting to think what I am trying to do is anything but!
I have a server, 192.168.1.10 username root password rootpassword,
remote folder is \var\log\pinglog\
I want to copy this to say c:\remotelogs\
The remote folder is full of sub directories which all I want to do is take a full copy of the whole lot every night.
It needs to auto reconnect and only copy the newest files, I can do this using the gui, but I want to run this on a scheduled task every night.
Can anyone point me in the right direction please?
