I can see in the log that it is truncated. WinSCP did not finish.

Don't you have "Stop the task if it runs longer than" or "If the task is already running, then the following rule applies > Stop the existing instance" enabled on your Task Scheduler task?

Or did WinSCP hang? Did you check list of running processes?

get function doesn't retrieve all files

Once I try to get all the files from the server to a local directory the get function isn't able to retrieve ALL the files for some reason.

I use the Task Scheduler from Windows 10 but apparently I cannot reach a conclusion from the log files. Here is the Action scheduled in the Task Scheduler:
-USER:PASSW@SERVER>COM/ /log="C:\winscp.log" /loglevel=0 /command "get /remotepath/csv/ C:\localpathdirectory\"

Attached you will find the log file winscp.log
