It's rather that you have changed the default app color mode in Windows settings.
Change it to light, if you do not like the dark mode.
Go to Windows Settings > Personalization > Colors > Choose your default app mode.

Bit Of Dark Theme Wants To Stay !!
In the latest update, my theme was changed to dark, no problem I changed it back to light theme in preferences, just one bit of the UI wants to stay as dark theme though 🤣
