Transfer mode

I would like to change transfer mode from BIN to ASCII, any navigation instructions, please?

I actually did but it did not mention where to find the option. In fact the link is quoted in my post.

In any case I found out there was an option to change Default / Text / Binaries / Exclude Temporaries, and it does not match with the screenshots found within the documentation.
