Incremental backup and versioning

I am wondering if someone has tried scripting to automatically do incremental backups to a server in a way that keeps up to a certain number of versions of each file?

I can pay a lot of money to contract this kind of service but I am hoping to do it myself with WinSCP and Winsshd.
